I haven't use birch for a walking stick. I really don't know. My Father in law uses hickory as he says they are stronger than any other would. However, I am a carver and hickory is a very hard wood to carve in.

I would think you could use birch. I use Black Diamond Willow as it is light and easily carved in. Aspen is another.

As I come to think of it, I bought several 6 foot sticks at a carving show and One was birch, one was aspen, pne was sassafrass, and one Willow(not Black diamond). The latter looked to have been submerged in water for a period of time.

So Yes, Mr. Mc Mullin, Birch can be used as a walking stick.
