Birch can be stain just about any color but I would think leaving it natural would be the best. Maybe a light stain.

I use Johnson paste floor was and give my stick several coats. Drying and buffing in between coats. About three does it. a clear poly coat. Depends on if you like Glossy or semi-gloss. I like a satin finish better. Just enough shine to bring out the would and detial in my carvings on it.
