red oak wood turning black

I'm grouting a countertop and have wood band edging around the perimeter. I noticed that in some spots the wood has turned black. I assume it must be from the grout or the water in the grout. How do you prevent this from happening? And, is there now a way to bleach the blackened areas and restain?
